Smoothie every day: The PB&J smoothie


I’ve been drinking smoothies and toying with recipes all week. Namely, I’ve been messing with grapes. I don’t want to post a recipe unless it comes out the way I want, but next week, grapes will be a main ingredient.

In the mean time, this is a great smoothie for kids and grown-ups alike. My children love it; it tastes like a peanut butter & jelly sandwich.

2 cups kale
2 cups coconut milk
One banana
1.5 cups frozen strawberries
1-2 tbs of peanut butter

Blend kale and coconut milk first, then add the fruit a bit at a time and continue to blend.

Add yogurt and it makes a great breakfast for moms & dads.

For buddies like Eli, who need extra calories, add-ins can include more peanut butter, nutella, heavy whipping cream or whole milk vanilla Greek yogurt. A vanilla Carnation instant breakfast would work well, too, and you can always use whole milk instead of coconut milk.
